Brief Job Description
The Dining Room Manager is primarily responsible for a la carte dining operations in the Clubhouse, Deck, Snack Bar, and special events outside these areas. An area of concentration will be managing our special events. This area of responsibility is the equivalent of running a high-volume, full-service casual and fine dining restaurant with the addition of member recognition (learning and using all members' names). The Dining Manager's goal is to ensure every member who comes through these areas is greeted and made to feel welcome every visit and thanked upon leaving every time. Also, this position requires wine and food knowledge for ordering, suggestive selling, training, stocking, inventory, and updating menus/beverage lists used in the Baltimore Yacht Club’s dining areas.
Job Responsibilities
Staff Management
· Manage a staff of 20 employees which includes servers, bartenders, foodrunners, bussers, hosts, and pool snack staff
· Assume an active role in the hiring, training, coaching, and disciplining all of the above-mentioned front-of-the-house staff
· Develop and enforce staff training, incentives, and motivational programs that also foster productive mentoring relationships with the employees
· Commit to creating a continuous teaching environment that focuses on staff timeliness, productivity, proper food service etiquette, uniform standards, and cleanliness standards
Restaurant and Operational Responsibilities
· Effectively communicate with the culinary team during service
· Manage the online reservation system to monitor projected attendance in the restaurant and at special events
· Oversee standard restaurant lunch and dinner service, special Club functions, and private events
· Interact and communicate with the membership to ensure they have had an enjoyable experience
· Assist in the set-up and break-down of special event buffets, stations, and tables
· Make regular trips around the Clubhouse to ensure staff is on-task and that the Clubhouse has a well-maintained appearance
· Develop, implement, and execute new ideas, methods, and procedures to enhance the Member experience (dining or social)
· Complete proper opening and closing of Clubhouse, including staff service meetings, assigning side-work, and education of daily specials
· Master Member interaction (fielding compliments, complaints, insight, suggestions, and taking appropriate action)
· Stay true to the Baltimore Yacht Club mission statement
Managerial Business Duties
· Work with a variety of outside vendors to arrange for weekly, monthly, and as-needed orders for alcoholic and non-alcoholic beverages, linens, staff uniforms, and restaurant supplies
· Conduct month-end inventories of beverage and snack products
· Prepare weekly staff schedules that facilitate providing top-notch Member service while being budget conscious
· Maintain brunch, lunch, dinner, dessert, and wine menus, along with their POS counterparts
· Take initiative to become involved in Club event planning, promotions, and related communications
· Place focus on increasing restaurant and special event attendance, revenues, and satisfaction levels
Requirements
· Working knowledge of the set-up end of POS systems in an a la carte restaurant
· Proficiency in all Microsoft Office programs (Outlook, Excel, Word, and Publisher)
· Strong written and verbal communication skills
· Exceptional organizational practices and multi-tasking abilities
· An understanding and passion for delivering high-level customer service
Compensation
· Commensurate with experience and education, salary is expected to be in the $42,500 per year range
· Additional benefits include meals, health insurance, personal days, paid vacation time after one year of service, IRA, Holiday Bonus
