SCP AmeriCorps encourages collaboration with community partners, organizations, and individuals to understand the prevalent social, structural, and systemic issues in local rural communities. Direct service opportunities invite students and local and national civic-minded volunteers to actively engage in promoting social change through community-based initiatives in rural Appalachia. The South Cumberland Plateau AmeriCorps Project is a direct service initiative with some capacity-building opportunities that engage our community through hunger relief, financial literacy, opioid prevention and recovery, tutoring, and education. Service members receive a living stipend during their service and are eligible for the Segal Education Award at the end of their volunteer term.

Member Duties : The Summer Meal Coordinator will assist the MCclurg Dinning facility at the University of the South in planning, coordinating, and executing their Summer Food Service Program to serve children meals in a tri-county rural distressed Appalachia. The Summer Meal Coordinator will order food and ensure that all menus meet the specified USDA meal pattern. They will ensure that all meals match the daily menu and assist in meal assembly. Contacting ordering companies to collect child nutrition or product specification labels, along with working with partners and meal sites for food scheduling and coordinating. Meet Summer Food Service drivers at the loading dock and will oversee compliance with meal collection logs. Ensure that all refrigerators and freezers are closed, locked after meal pick-up times, and maintained at USDA food-safe temperatures. Responsible for coordinating volunteers, pick-up times, and meal handoffs. They will be tasked with keeping all Summer paperwork neatly managed.
